Blueberry Pie Bliss

Summer is fast approaching and with it some of our more patriotic holidays. I can think of no better way to serve up some red, white & blue than with a blueberry pie. I am a big fan of Martha Stewart’s Perfect Piecrust. It has been a reliable pie crust staple in my kitchen for years. I know there are some who swear by incorporating Crisco to get the flaky factor but I just can’t abide that. I like the purity of an all butter crust and I have yet to embrace lard for pie crusts. Maybe someday I will give lard a chance, but it is not this day…

For the filling I like to try different recipes and see what works. My goal is to have a firm filling that isn’t leaking all over and also have some evidence of whole berries left in it. For this particular pie I tried a Williams Sonoma’s recipe. I chose this one mainly because I was using frozen blueberries we bought last summer when the fruit truck came around. Overall the taste was good and not too sweet. The filling didn’t end up quite as firm as I would have liked. An adjustment with the corn starch or allowing the berries and sugar to meld together for a while and then draining before adding the other ingredients might help.
